Industrial research to design a prototype that will enable the large intestine cutting process to be automated

The meat sector is the fourth largest industrial sector in the region. Optimising the processes involved in slaughter and the processing of the resulting products is vital to increasing the sector’s competitiveness. One of the key factors is being able to combine productivity with the conservation of resources – both energy and water – whilst improving working conditions for staff, without compromising the quality and food safety of the products.
- It is against this backdrop that the project’s primary need arises, which is, in turn, its main objective: to carry out an industrial research project to design a prototype that will automate the process of cutting the large intestine in a slaughterhouse, using a multi-cut offal system that reduces the process’s water consumption. It is important to highlight that the prototype to be investigated has no similar counterpart in the market.

- To reduce the risk of cross-contamination during the production process at the abattoir, thereby enhancing the food safety of the product.
- Increase workplace safety:
- To reduce the noise made by the guts when they are cut.
- Seeking safer alternatives for cutting pig large intestines
- Reducing the repetitive nature of the operator’s tasks
- Replace a manual and time-consuming process with a more efficient and controlled one.
- To reduce human error in measurements when cutting the large intestines, thereby reducing resource use
- To reduce water consumption both in the large intestine cutting process at the abattoir and during its cleaning.
